Nutritional charateristics of organic freshly stone - ground

By far some of the best reading on food nutrition and bread I've seen in a long time. This article concludes that sourdough bread is the best to consume as its acidic environment allows for greater nutrient and mineral absorption. I just recently acquired a starter from the Little bakery here and am happy to say it is very active and tasty. Now I'm jonesin' for a Kitchenaid grain mill attachment so I can grind whole wheat and have the entire grain (as I read here, 'whole wheat' flour usually has par t ofthe bran and all the germ removed, which eliminates most of the nutrients).
